Aperol Spritz
Since today is Valentines Day, I feel like it's only appropriate that I take a walk down memory lane to the last time Ian and I took a romantic vacation just the two of us: Italy 2014. It's starting to feel like a distant memory, but I still have so many mental pictures that I pull up in my brain when I'm wanting to teleport myself there. One night we went to a hotel bar in Rome for pre-dinner drinks and as I looked around the room, I saw pops of orange in everyone's glasses. I quickly realized that clearly we have a thing here! Italians love themselves an Aperol spritz. So I ordered one, took a sip, and thought "what have I been overlooking all my life?" This is a GOOD go-to cocktail, especially to kick off a celebratory night. It's refreshing, light, and so ridiculously easy to make. You don't even have to measure - just eyeball it. Considering that it's a Prosecco based drink, it's kind of perfect for tonight, don't you think?
MAKE IT:
3 parts Prosecco2 parts Aperol (or a little less, if you like it a bit lighter like me)Splash of club sodaOrange slice for garnish
Fill a glass with ice. Add the Prosecco, then the Aperol. Top with a splash of club soda, stir, then garnish with the orange slice.
